Double Chocolate Almond Cookies

Everyone loves chocolate, and nuts are so good for you…too bad so many schools have banned peanut butter in any form.  However, if your child is allergic to peanuts, or you want to make a cookie that won’t harm anyone else who might be allergic to peanuts, this is a good one!  The almonds give it a nice protein punch, and the chocolate cream cheese imparts that yummy chocolatey rich taste.

 

Ingredients:

1 cup butter

2/3 cup almond butter

2/3 cup almond meal

2 3/4 cup sugar

3 eggs

3 T. chocolate cream cheese

2 T. whipping cream

2 T. vanilla

3 1/2 cups 9 grain flour

2 T. baking soda

1 T. salt

Chocolate chips

 

Directions:

Preheat oven to 350F and get the baking trays ready.

Mix the wet ingredients and dry ingredients in two separate bowls.  This is not necessary, simply it will make your life easier!

When both are mixed, add together into one bowl.  Drop by heaping spoonfuls onto the trays and back for 9-15 min, until golden brown.
