How to: Baking Butternut Squash

Butternut squash is so simple to make. It does take a while to bake but prep is quick and easy and once it’s done it’s ready to serve!

First pre-heat the oven to 350F. Cut the butternut squash into halves and scoop out the seeds, as seen below:

There are several recipes out there that bake the squash cut side up, but if you do that you have to brush some kind of oil on the flesh so it doesn’t dry out. I prefer placing them cut side down. This keeps it from drying out and the moisture helps the inside cook quicker. First place a small amount of water into the baking dish (I prefer stoneware as seen below), then place the squash in. If you do it the other way round, the squash might stick to the bottom of the pan.

Lastly, poke the tough outer skin of the squash with the tip of a knife or a fork. Place into the oven and put on a timer.

Bake at least 30 min, the squash will be done when poked with a fork and it slides in easily. It can take up to an hour and a half in a colder oven, just keep an eye on it.

Pull out of the oven and using a spoon, scrape the cooked flesh into a bowl or serving dish. My favorite way of eating it is to blend it like mashed potatoes and add butter, milk or cream, salt and a dash of brown sugar. My kids scarf it down! 🙂 But there are savoury options as well that taste good! Try it many ways!
